CHOCOLATE POUND CAKE


chocolate pound cake Chocolate Pound Cake is any chocolate cake made with a 1:1:1:1 ratio of flour, butter, eggs, and sugar. Originally the cake required 1 lb. of each of the four ingredients; hence, its name.

That said, there are numerous variations on the traditional pound cake. Some of these variations can drastically change the texture and flavor of the cake, but the name is still often used.

Sometimes flavoring agents (such as vanilla extract or almond extract) or dried fruit (such as currants or raisins) are added. Baking soda or baking powder may be used in order to induce leavening during baking, resulting in a less dense cake. For a more moist cake, a cooking oil (typically a vegetable oil) is sometimes substituted for some or all of the butter.

Here are some specific varieties:

American style
American pound cakes are lighter but often contain an abundance of butter to provide a rich taste. They're considered a staple in the cuisine of the Southern United States.

"Sour cream" is a popular type in the United States. It involves the substitution of sour cream for some of the butter. This produces a more moist cake with a pleasantly tangy flavor.

British style
A classic British chocolate pound cake recipe specifies one pound each of flour, butter, 8 eggs, sugar, and several kinds of dried fruit. (It's usual to weigh the eggs first and then use the same weight for the other ingredients.) This produces a large, dense cake which is still popular in Britain.

French style
"Quatre-Quarts" (which means "Four Quarters") is a time-honored and popular cake of the Brittany region of France. As its name implies, it uses the same quantity of the 4 ingredients as all of these cakes, but no added fruit of any kind. Some recipes add chocolate or lemon juice for flavor.

Mexican style
In Mexico it's called "panqué".
Mexican panqué is much like the traditional U.S. recipe.
The chocolate variety most likely uses Mexican chocolate.
Its most familiar variants are "Panqué con Nueces" (-"with Walnuts") and "Panqué con Pasas" (-"with Raisins").

Colombian style
"Ponque" is the Colombian version.
The Ponque is basically a wine-drenched cake with cream or sugar coating.
It's very popular at social celebrations such as birthdays and weddings.
